Perfect (Lazy) Sunday Brunch

Sundays are made for pure unadulterated relaxing...

I like to enjoy a long leisurely 'Perfect Sunday Brunch', before turning to some other relaxing activity, to make the most of this day of rest! 

Sunday Brunch Essentials
Here's my little guide to Perfect Sunday Brunch (a bit of an alternative to the usual fry up!)



Fresh eggs (2/3 per person)
Pack of mushrooms (per two people, I favour chestnut for their nutty flavour)
Gia garlic paste (or 2-3 cloves of garlic to crush if you can be bothered!)
Lemon or lemon juice
Loaf of sourdough or brown bloomer bread
Hash browns (2-3 per person)
Olive oil
White wine vinegar (or any that you have, I used Sushi vinegar)
Sea salt, black pepper, mixed herbs, dried parsley
Cafetiere coffee or teabags (try Lavazza or Yorkshire Gold tea bags)
Milk & sugar
Ketchup /other sauces

Garlic paste - save yourself the fiddling!


Cafetiere or teapot (depending on your preference)
Saucepan of boiling water
Frying pan
Wooden spoon
Fish slice
Grill or oven
Sunday papers
I like this Bodum cafetiere in lime!


1. Put the hash browns in the grill/oven, don't forget about them and turn once when they turn brown
2. Put the saucepan of water on the cooker, add sea salt and vinegar, and bring it to the boil.  My secret tip is to also add black pepper and mixed herbs to the water!
3. Wash mushrooms and slice
4. Slice your choice of bread and leave ready by the toaster
5. In the frying pan, heat olive oil and when hot enough add the garlic paste. Add mushrooms and stir. Add sea salt, black pepper, parsley and a few squirts of lemon juice.
6. Meanwhile, whilst mushrooms are cooking, crack eggs per person into a dish, also pop the first batch of toast into toaster.
7. When the water in the saucepan is bubbling, use the fish slice to swirl the water and then add the egg mixture into the swirl.  Let the eggs poach for as long as you like, depending on how cooked you'd like them.  When you deem them ready, drain and place on top of toast.
8. Before cooking the next batch of eggs, add some more herbs and black pepper into the water.
9. Hash browns should be ready by now, so remove from grill and plate up.  Make remaining toast and turn on kettle.  Make tea or coffee to your taste.
10. Everything should be ready by now, so grab the papers, coffee or tea, plate of 'Perfect Brunch', cutlery, friends/boyfriend/husband and TUCK IN!
